<\/span>Nonstick cooking spray
\n8\t<\/span>ounces wild mushrooms such as oyster, shiitake and\/or baby\u00a0bella
\n1\/2<\/span>pound ground beef
\n1-1\/2<\/span>tablespoons taco seasoning
\n6\t<\/span>(6-inch) corn tortillas, quartered
\n1\/4<\/span>cup shredded Mexican cheese blend
\n1\/2<\/span>cup chopped tomato
\n1\/2<\/span>cup thinly sliced Romaine lettuce
\n1\/4<\/span>cup thawed frozen corn
\n1\t<\/span>green onion, sliced
\n1\/4<\/span>cup sour cream or plain Greek yogurt <\/p>\n<\/div>\n

1.<\/span>Preheat oven to 375\u00b0. Spray 24-cup mini muffin pan with cooking spray. In food processor, pulse mushrooms until small pieces remain.
\n<\/span><\/p>\n

2.<\/span>Heat large skillet over medium-high heat; spray with cooking spray. Add mushrooms; cook 5 minutes or until moisture is released, stirring occasionally. Add beef; cook 8 minutes or until browned, breaking up beef with side of spoon. Stir in taco seasoning and 1\/2 cup water; cook 2 minutes or until liquid is absorbed, stirring occasionally.
\n<\/span><\/p>\n

3.<\/span>Press 1 tortilla quarter into each prepared muffin cup; fill cups with beef mixture and cheese. Bake 15 minutes or until cheese melts and tortillas are crisp; serve topped with remaining ingredients.
