Peach Salsa

Serves: 8

1pound tomatoes, diced
1-1/2pounds peaches, diced
1 green bell pepper, seeded and diced
2 jalapeños, seeded and diced
1 medium onion, diced
1/2bunch cilantro, chopped
1 lime, juiced
Salt and pepper, to taste

1.Mix diced tomatoes, peaches, bell pepper, jalapeños and onion in a bowl. Toss to combine. Add chopped cilantro, lime juice, salt and pepper. Mix until well incorporated. Serve over grilled fish for a meal made easy, or with Martin’s tortilla chips for a quick appetizer.
