Umami Farro & Avocado Kale Salad

Prep: 15 minutes plus cooling
Cook: 39 minutes • Serves: 4

1 cup pearled farro
1 tablespoon Our Family® 100% Pure Olive Oil
2-1/2 teaspoons Our Family® Umami Mushroom Seasoning Blend
1 large avocado, peeled, pitted and sliced
6 cups packed baby kale
3/4 cup crumbled feta cheese
1/4 cup plus 2 tablespoons Greek vinaigrette
1 tablespoon lemon zest

1.In medium saucepot, cook farro over medium heat 3 minutes or until fragrant and starting to brown, stirring frequently. Add oil and seasoning; cook 1 minute, stirring frequently. Add 6 cups water; heat to a simmer. Cook farro, uncovered, 35 minutes or until farro is tender, stirring occasionally. Drain farro; cool 15 minutes, stirring occasionally.

2.In large bowl, toss avocado, kale, cheese, vinaigrette, lemon zest and farro. Makes about 9 cups.
