Grilled Orange-Hot Honey Salmon Sliders

Grill: 6 minutes • Serves: 4

2 tablespoons hot honey
1 tablespoon fresh orange juice
1 teaspoon orange zest
4 skinless salmon fillets (about 5 ounces each)
8 white slider buns
1/2 cup mayonnaise
1/2 small red onion, thinly sliced
1/4 cup packed baby arugula

1. Prepare outdoor grill for direct grilling over medium-high heat. In small bowl, whisk honey, orange juice and orange zest. Makes about 3 tablespoons.

2. Brush 1 side of salmon with 1 1/2 tablespoons honey mixture. Place salmon, honey mixture side down, on hot grill rack; cover and cook 3 minutes. Brush salmon with remaining 1 1/2 tablespoons honey mixture; turn salmon, cover and cook 3 minutes or until internal temperature reaches 145°. During last minute of cooking, place buns, cut side down, on hot grill rack; cover and cook 1 minute or until toasted. Transfer salmon to cutting board; cut crosswise in half.

3. Spread cut sides of buns with mayonnaise; serve salmon in buns topped with onion and arugula. Makes 8 sliders.
