Grilled Curried Chicken with Charred Cauliflower Steaks

Prep: 10 minutes plus marinating
Grill: 10 minutes • Serves: 4

1/2cup Our Family® mayonnaise
2 tablespoons Our Family® apple cider vinegar
1 tablespoon curry powder
4 boneless, skinless chicken breasts (about 1-1/4 pounds)
1/2 cup Bertolli® extra virgin olive oil
2 teaspoons Our Family® garlic powder
2 teaspoons Our Family® oregano leaves
2 large heads cauliflower
2 tablespoons Our Family® pine nuts
Chopped fresh cilantro for garnish (optional)

1. In medium bowl, stir mayonnaise, vinegar and curry powder. Place chicken on rimmed baking pan and brush both sides with mayonnaise mixture; cover and refrigerate at least 2 or up to 6 hours.

2. Prepare outdoor grill for direct grilling over medium heat. In small bowl, stir oil, garlic powder and oregano. Place cauliflower, stem side down, on cutting board; cut 4 (3/4-inch-thick) steaks from center (reserve remaining cauliflower for another use). Brush both sides of cauliflower with oil mixture.

3. Place chicken and cauliflower on hot grill rack; cover and cook 10 minutes or until internal temperature of chicken reaches 165° and cauliflower is lightly charred, turning once.

4. Sprinkle chicken with pine nuts; serve with cauliflower steaks garnished with cilantro, if desired.
