Instant Pot® Italian Chicken Sausage & Pepper Sandwiches

Prep: 5 minutes plus pressurizing
Cook/Pressure Cook: 18 minutes • Serves: 4

2 teaspoons Our Family® Extra Light Olive Oil
1 package (11 ounces) fully-cooked sweet Italian style or sundried tomato chicken sausage
1 small yellow onion, halved and thinly sliced
1 cup thinly sliced orange, red and/or yellow bell peppers
1 can (14.5 ounces) Our Family® Diced Italian Style Tomatoes with Basil, Garlic and Oregano
1/2 cup Our Family® Reduced Sodium Chicken Broth
4 wheat hot dog buns, split and toasted
Our Family® Shredded Part-Skim Mozzarella Cheese for serving (optional)
Our Family® Crushed Red Pepper for garnish (optional)

1.In 6-quart Instant Pot, heat oil on Sauté-More. Add sausage; cook 5 minutes or until lightly browned, turning once. Add onion and peppers; cook 5 minutes or until vegetables are lightly browned, stirring frequently. Add tomatoes with their juice and broth; cook 1 minute, stirring frequently. Place lid on Instant Pot and close pressure valve to seal; pressure cook on low 7 minutes. Quick release pressure; remove lid. Makes 4 sausages and about 2 cups onion mixture.

2.Serve sausages in buns topped with onion mixture and cheese garnished with crushed red pepper, if desired.
