Mixed Berry Pancake “Spaghetti” with Honey-Lemon Yogurt Drizzle

2 tablespoons fresh lemon juice
2 tablespoons Our Family® Pure Honey
1 teaspoon lemon zest
2 cups Hidden Harvest™ Original Pancake & Waffle Mix
Our Family® Canola Oil No Stick Cooking Spray
1/2 cup chopped fresh strawberries
1/2 cup fresh blackberries
1/2 cup fresh raspberries
1.In medium bowl, whisk yogurt, lemon juice, honey and lemon zest. Makes about 3/4 cup yogurt mixture.
2.In large bowl, whisk pancake mix and 1-2/3 cups water. Makes about 2 cups pancake mix.
3.Heat griddle or large nonstick skillet over medium heat; spray lightly with cooking spray. In 4 batches, drizzle 1/4 cup pancake mix to make “spaghetti” strands; cook 2 minutes or until air bubbles develop and underside is an even, golden color. Turn pancake strands; cook 2 minutes or until bottoms are golden brown. Repeat with remaining batter, spraying griddle with cooking spray as necessary. Makes about 4 lightly packed cups pancake “spaghetti.”
4.Serve pancake “spaghetti” topped with strawberries, blackberries and raspberries drizzled with yogurt mixture.
